Instructions to Use

Black Rice Pancakes with Sweet


Ingredients (makes about 8 pancakes):

  • 1 cup black rice flour
  • 1/2 cup all-purpose flour (or another gluten-free flour blend for a gluten-free option)
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups milk (dairy or non-dairy)
  • 1 egg (or 1 flax "egg" for a vegan option)
  • 1 tablespoon melted butter or oil

Sweet Option:

  • 2 tablespoons sugar or maple syrup
  • 1/2 teaspoon vanilla extract
  • Fresh fruit (optional)

Instructions:

  1. In a large bowl, whisk together the black rice flour, all-purpose flour, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, egg (or flax egg), and melted butter or oil.
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined. Be careful not to overmix. A few lumps are okay.
  4. For Sweet Pancakes: Add the sugar or maple syrup and vanilla extract to the batter and stir to combine. If using, fold in fresh fruit.
  5. Heat a lightly oiled griddle or frying pan over medium heat.
  6. Pour about 1/4 cup of batter per pancake onto the griddle.
  7. Cook for 2-3 minutes per side, or until golden brown and cooked through. Bubbles will appear on the surface of the pancakes when they are ready to be flipped.
