Ingredients

  1. 1 cup buckwheat groats (raw or toasted)
  2. 2 cups water or vegetable broth
  3. ½ tsp salt
  4. 1 tbsp butter or olive oil (optional)

Instructions

  1. Rinse the buckwheat well under cold water.
  2. Bring the water or broth to a boil in a medium pot.
  3. Add the buckwheat and salt, then reduce to low heat.
  4. Cover and simmer for 12–15 minutes, until all liquid is absorbed.
  5. Remove from heat and rest for 5 minutes.
  6. Fluff with a fork and add butter or olive oil if desired.
